2005 Dyer Cabernet Sauvignon - Library Release
Early in 2013 we had a chance to taste thru 15 vintages of Dyer Vineyard- what was exciting to us was the way the core characteristics (dark chocolate, black cherry, anise) of the vineyard came through while the vintage differences were pronounced- and all of them were still very much alive! It made for a range of wines that guided us thru the years.
One of our favorites from that tasting was the 2005 vintage Dyer Vineyard Cabernet Sauvignon. At 9 years of age, this wine still has the concentrations and depth of flavor that it showed in it’s youth now combined with a savory mocha note and tannins that have softened with time. If you’re looking for something a little special to put on the table over the holidays this might just be it!
Notes on 2005 Dyer Vineyard Cabernet Sauvignon (tasted Nov 2014)
• Deep garnet color
• Berry compote and reds currents with a plummy spice, dried cranberries, and a hint of olive tapenade.
• Fresh earthy-woodsy notes of forest floor and wild mushrooms- complex and savory.
• Resolved tannins kept firm with a balance acid. Lingering silkiness on the palate.
• Perfect with duck, game birds, beef and lamb.
• 83 % Cabernet Sauvignon
• 11 % Cabernet Franc
• 6 % Petit Verdot
