2005 Dyer Vineyard Cabernet Sauvignon |
![]() Our 2005 Dyer Vineyard Diamond Mountain Cabernet Sauvignon remains in the same stylistic groove we have maintained since 1996- we favor a restrained, balanced style that reflects pride of place. The 05 harvest started early and wet. A warm summer turned cool in late August and maturation was slow and steady thru September and into October. We harvested on October 23 with ripe full tannins. Flavors are intense and fruit driven. The blend is 83% Cabernet Sauvignon, 11% Cabernet Franc and 6% Petit Verdot. After 20 months in barrel, the wine was bottled in August 2007. With one year of bottle age, the wine is dense, chewy and accessible with great aging potential. Our notes read: “primary fruit aromas of black cherry and currants with notes of graphite and cocoa. A big wine; finely structured wine with great minerality and , supple muscular tannins." |
