Cabernet Sauvignon

Dyer Vineyard ~ Estate Cabernet Sauvignon Grown On Diamond Mountain
Cabernet Sauvignon is often called the “king of grapes” and that is certainly true in Napa Valley’s Diamond Mountain District. It is perhaps the most widely planted grape in the world, rising first to prominence in France’s Bordeaux region where it thrives and where the reputation for high quality wines is historic. Flavor in red wines is extracted from the skins during fermentation, and Cabernet Sauvignon, with it’s small berries and thick skins, makes wines that are highly colored, flavorful and have a tannin structure that ensures age-ability. In Napa Valley, this is accentuated in the hillside AVAs where well-drained soils ripen grapes with extremely small berries and reduced yields making for intense, concentrated wines with high typicity and great structure. Cabernet Sauvignon is the dominant grape in Napa Valley’s Diamond Mountain District and here at Dyer Vineyard it is 78% of the vineyard. The two blending varieties grown at Dyer Vineyard are Cabernet Franc and Petit Verdot.

2021 – Current Release
The 2021 vintage saw draught conditions in the Napa Valley with less than a third of normal rainfall. A mild spring brought an early budbreak and bloom and the season was off to a good start. Overall the season was well modulated with nights remaining cool and steady daytime temperatures seldom over 95 F. At Dyer our dry farmed vineyard produced a light crop of small berries loaded with flavor and tannin. We picked on September 8.
Tasting Notes: Concentrated aromas of cassis and plum with a lifted floral note of dried rose petals. A fine mineral driven palate of earth and graphite with just a hint of savory herbs. A powerful wine with plenty of fine grain tannin.
“We favor a restrained, balanced style of winemaking that cultivates the unique characteristics of a vineyard. Over the past 26 years our winemaking has evolved slowly to focus on refining the tannin structure that Diamond Mountain is famous for while capturing the savory black fruits (plums, blueberries) that seem emblematic of Dyer Vineyard. We feel, that at their best, the expression of Cabernet Sauvignon is an elegance and verve. We hope you agree.”

What The Critics Are Saying…
“A blend of 81% Cabernet Sauvignon, 15% Cabernet Franc, and 4% Petit Verdot, the 2021 Cabernet Sauvignon reveals blackcurrants, new leather, tobacco, and graphite notes. Medium to full- bodied on the palate, with pure fruit, crushed stone minerality, and beautiful balance, this long- finishing wine will evolve gracefully for 12-15 years.” Rating: 95
